It contains an exceptionally high percentage of gluten, which is what makes a pasta strand stretch and not break apart when cooking. Bob's Red Mill uses only premium quality, pure Durum Wheat and grinds it to Semolina's traditionally sandy texture. Try our simple handmade pasta recipe on the back of this package. Many people prefer making pasta using 50% Semolina and 50% Unbleached White Flour. Semolina can also be added to pizza dough and other baking recipes.
